    中秋節最受歡迎的經典糕點之一,就是外酥內香、鹹甜交融的「蛋黃酥」。這篇整理的是新手也能上手的簡易版本,只需約一小時,就能完成外皮酥脆、餡香濃郁的蛋黃酥! 🍳 材料準備 餡料 鹹蛋黃可以自己醃製(教學將在另一篇文章中分享),或到中國超市購買現成的鹹鴨蛋。 紅豆沙也可以自己製作(教學將在另一篇文章中分享)。或到中國超市購買現成的紅豆沙。 鹹蛋黃:6/10/12/24 顆(依份量調整) 紅豆沙餡:180 g/300 g/360 g/720 g 酥皮部分 蛋黃酥的外皮分為「油皮」與「油酥」兩層。 🟠 油皮(每顆約 23 g) 🟡 油酥(每顆約 15 g) 裝飾 蛋黃液(刷表面用) 白芝麻(可略) 🥣 製作步驟 ① 烤鹹蛋黃 可將所有固態鹹蛋黃放入碗中,倒入少量米酒浸泡幾分鐘,有助去腥提香。 接著烤箱預熱至 150℃,烘烤 8–10 分鐘,烤好後放涼備用。 ② 製作油皮與油酥 【製作油皮油酥】在等待蛋黃烤熟期間,將油皮、油酥所有材料各自混合再揉成麵團即可。 接著將麵團分割成每顆所需份量(油皮 23 g/油酥 15 g),靜置鬆弛 15 分鐘。 ③ 製作餡料與包餡 【製作餡料】等待麵團鬆弛期間,將烤好的鹹蛋黃,一一用紅豆沙包起,搓圓備用。 ④ 製作酥皮 【製作酥皮】 將油皮用手壓平,包入油酥,搓圓。 包好後將麵團壓扁,擀成牛舌餅般的長條狀,再捲起來,靜置鬆弛約 15 分鐘(可以偷懶省略此步)。…
